Foodie Friday!

Because I can't afford to be a foodie every day of the week. ; P


This weeks recipe: Salmon with Chard and Coconut Sauce  (Serves 4)

This dish is truly delicious! It looks and tastes glamorous but comes together in a snap. If you even sort of like Thai food you will love this! It's healthy too. :)

Ingredients:
1 1/2 inch fresh ginger
4 salmon steaks
Sea salt and pepper
Chard (about a handful when held by the stalks)
Olive oil
1 onion, thinly sliced
4 tomatoes, chopped and deseeded
1 tsp sugar
3/4 cup coconut milk
1/2 cup water
Juice of 1 lime
Handful of chopped fresh cilantro


Slice the ginger into slivers. Season the salmon with sea salt and pepper. Set aside. Strip the chard leaves from the stalks and roughly chop the leaves. Dice the stalks into tiny pieces.


Heat the olive oil in a deep, wide frying pan over medium heat. Add the onions, ginger and chard stems and cook, stirring occasionally, for 5 minutes.


Add the tomatoes and sugar and continue cooking for another 5 minutes. Add the coconut milk and water and season well with sea salt and pepper. Stir, bring to a boil, then simmer over low heat for 15 minutes.


Stir in the chard leaves, squeeze the lime over the top and arrange the salmon pieces in a single layer over the chard sauce. Spoon some of the liquid over the salmon.



 Cover with a tight-fitting lid, return to medium heat, and simmer for 10 minutes or until the fish is cooked through.


To serve, lift the salmon and the chard sauce onto a serving dish and spoon the remaining liquid over top. Garnish with cilantro and serve right away. Preferably with rice.

One of the best cookbooks I own (and that's saying something!) Every dish I have made from this cookbook has been delicious and healthy! I would highly recommend this book to any and all foodies ;)

I know Jenn joined when she was blogging but she's gotten a little lazy about the blogging thing. Not that she doesn't have a toddler, one on the way and three dogs to deal with. :-}
